Ingredients
- ½cup coconut milk
- 1 to 1½tablespoons lime juice
- 1½teaspoons sugar
Preparation
- Step 1
In a blender, purée all ingredients with 3 ice cubes. Pour into any type of glassware and serve with a straw cut to a comfortable length.

I've had this drink many times in Colombia and it's one of my favourites. Use 1/2 cup of coconut cream (the firm substance at the top of a can of coconut milk when it separates) instead of coconut milk, and about 1 cup of ice. Sugar to taste. A splash of rum if you want to make it a cocktail. Tastes like summer.
Aha! I wish I’d read the notes before making. It was good but using less of the coconut cream would have been better. I ended up adding a little water to make it less thick and that helped.

If I remember correctly, back in the '70's Harry Nilsson said, "You put de lime in de coconut, shake it all up..." What more do you need?
