Ingredients

Yield:Four servings
  • 1pound linguine
  • ¼cup plus 2 teaspoons olive oil
  • 3cloves garlic, peeled and minced
  • 8plum tomatoes, cut into ½-inch dice
  • 2-3⅔-ounce cans smoked mussels, drained
  • 5tablespoons chopped Italian parsley
  • ½cup fresh basil leaves, cut across into thin strips
  • 3teaspoons salt
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Bring a large pot of salted water to a boil. Add the linguine and cook until al dente, about 10 minutes. Drain.

  2. Step 2

    Meanwhile, heat ¼ cup of olive oil in a medium skillet over medium heat. Add the garlic and saute for 2 minutes; do not let it brown. Add the tomatoes and cook just until heated through, about 4 minutes. Remove from heat and stir in the mussels, parsley, basil, salt and pepper.

  3. Step 3

    Place the linguine in a large bowl and toss with the mussel mixture and the remaining 2 teaspoons of olive oil. Divide among 4 plates and serve immediately.

Where there's smoke there's fire (or should be) so I added a pinch of red pepper flakes.

A keeper.

Easy stovetop meal. I used fresh linguine we had on hand that needed to be used. Wish a weight had been given for the tomatoes; I chose 8 about the same size; they weighed about a pound total. This would be great when the tomatoes and herbs are at peak yield in the summer gardens. I also used Trader Joe's tinned mussels and paired the dish with a crisp Portuguese Vinho Verde.

Was looking for a use for a can of smoked mussels and this is it! Works beautifully with angel hair pasta for a very quick and easy dinner, perfect light pasta for summer evenings.

This is delicious and very easy. The sauce, with its unpeeled, unseeded tomatoes that are barely cooked, is what I would call a rustic sauce, so I decided to use DeLallo whole wheat spaghetti (which is the best for whole wheat, imo) and it worked nicely. Also used Trader Joe's smoked mussels which were fine. Will definitely make this again
