Ingredients
Yield:â…” cup sauce (enough for pasta for 4)
- 1whole bulb garlic, the cloves separated, peeled and smashed
- ½cup chicken broth, prepared by any standard recipe, or canned
- 2cups fresh basil leaves
- 1tablespoon olive oil
- ½teaspoon kosher salt (optional; skip if using canned broth)
Preparation
- Step 1
Place garlic and broth in a 4-cup glass measure. Cover tightly with microwave plastic wrap. Cook at 100 percent power for 8 minutes (15 minutes in a small oven).
- Step 2
Remove from the oven. Pierce plastic with tip of a small knife to release steam, then carefully remove plastic. Scrape mixture into a blender. Blend until smooth. With motor running, add the basil, then the oil and, if desired, salt. Blend well.
