  • 1ounce fresh lemon juice
  • 1teaspoon simple syrup
  • 2ounces London Dry-style gin
  • Soda water, to top
  • Lemon wheel or wedge, for garnish

  1. Step 1

    In a cocktail shaker filled with ice, vigorously shake lemon juice, simple syrup and gin. Strain over fresh ice into a highball glass and top with soda water. Garnish with a wedge or wheel of lemon.

The better NYT recipe for a Tom Collins is the one by Robert Simonson--for the main reason that 1 oz. of simple syrup instead of tsp is really the amount needed to make this as flavorful as it should be.
