While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink’s froth and avoid its inevitable separation.

Ingredients

Yield:1 drink
  • 2ounces dry gin
  • ¾ounce fresh lime juice
  • ½ounce simple syrup
  • ½ounce orange liqueur, such as Pierre Ferrand Dry Curaçao, Cointreau or triple sec
  • 1egg white
  • Ice
  • Soda water, chilled

Preparation

  1. Step 1

    In a shaker, combine the gin, lime juice, simple syrup, orange liqueur and egg white. Cover and shake vigorously for 10 seconds. Add ice to the shaker, cover again and shake vigorously until chilled and well frothed, about 10 to 15 seconds more. Double-strain into a small Collins or fizz glass without ice and top with soda water. Serve immediately.

This drink is sublime. I upped the lime juice to 2 ounces to match the gin quotient and skipped the simple syrup and added 1/2 ounce of Cointreau. I threw in a few ice chips from the shaker just because. Midnight Fizzes will help me make it through Omicron. Cheers!

A wonderful cocktail! I think it works better with more Cointreau and slightly less gin. Adding frozen strawberries after straining out the ice suits this cheery drink.

Fee Brothers makes a product called Fee Foam, which will give you the same effect without the egg white, but then, you know, chemicals. I use it, but I'm about 75% chemicals anyway!

Excellent. I made it without the soda water and it was akin to a pisco sour. Very nice indeed.

Made this for new year celebrations. Followed the recipe exactly using Hendricks flora adora and Cointreau. We enjoyed it, but all agreed it felt like a summer drink we’d prefer to enjoy poolside. All in all a very good cocktail you would pay $20 for at a restaurant, but not necessarily what we expected for New Year’s Party drinks.

Yum! Used Meyer lemon in place of lime because that’s what’s ripe on my trees. Having in place of Champagne on this quiet NYE staying in with my toddler asleep. Cheers!
