Ingredients
- 1ounce dry vermouth
- ½ounce fresh lemon juice
- ¼ounce crème de cassis
- Pinch flaky sea salt
- 1ounce dry tonic, chilled
- 3ounces dry sparkling rosé, chilled
- 1lemon slice
Preparation
- Step 1
Fill a lowball glass with ice. Add the vermouth, lemon juice, crème de cassis and salt. Top with tonic and sparkling rosé. Stir gently to combine, then garnish with the lemon slice.

“All day cassis” Misleading: I was led to believe by the title that this delicious drink was designed to be consumed all day, from dawn to dusk, not served at any point of the day. ;)
Oops, posted too soon. Add 1 once of gin to the base recipe and you’ve got a Half Day Cassis—2 ounces of gin and you’ve got a Quarter Day Cassis, and so on.
Sorry, what is “dry tonic?” Tonic water, like Fevertree?
Fabulous drink! This is now my favourite aperitif!
I love cassis
Fevertree “Mediterranean” tonic has half the calories of the elderflower tonic, for example. It tastes better than the light. It’s in the blue bottles.
