  • 1hard-boiled egg, chopped
  • 1cup homemade or Hellmann's mayonnaise
  • ¼cup chili sauce or ketchup
  • 2tablespoons finely chopped pimento-stuffed green olives
  • 1 to 2tablespoons finely chopped sweet pickle
  • 1tablespoon chopped onion
  • 2teaspoons finely chopped fresh parsley
  • ½ to 1teaspoon fresh lemon juice
  • Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Combine the egg, mayonnaise, chili sauce, olives, 1 tablespoon pickle, the onion, parsley and ½ teaspoon lemon juice in a mixing bowl and blend well. Taste and season with salt and pepper. Add more chopped pickle and lemon juice as desired.

My husband who adores this dressing is making the nth batch right now, and you can definitely keep hard boiled eggs for weeks without any issues, we do it all the time. We do keep the dressing in the fridge for several weeks, and being an engineer he will tell you the quantity is enough to dress 5 lettuce wedges:)

I add sweet smoked paprika, but then again I add sweet smoked paprika to most everything...

I love Thousand Island dressing and now I love it even more! This makes a lot. It could keep in the refrigerator for 2-3 weeks if it weren't for the egg. So think of adding egg just before using instead of putting it all in at once. Also, I think it would be good without the egg. Certainly better than any store bought I have come across.

I made this with ketchup because I didn’t have chili sauce. I added a teaspoon of chili powder to give it a little kick. It’s incredible.

Chilli sauce and hot Hungarian paprika add a little spice to this nice dressing

I didn't realize I still liked Thousand Island dressing until I made this for my husband. Not that I ever need an excuse to make a salad, but we make salads just so we can have this dressing; it's that good.
