Fettuccine With Tomato And Lovage Sauce

Ingredients
- 1pound fettuccine or spinach fettuccine
- 1tablespoon olive oil
- 1small onion, cut into ¼-inch dice (about ¾ cup)
- 4medium cremini mushrooms, cleaned, trimmed, cut in half and then lengthwise into ¼-inch-wide slices
- 2medium cloves garlic, smashed, peeled and minced
- 3medium tomatoes, cut into ¼-inch dice (2 cups)
- ¼cup lovage leaves, cut crosswise into thin strips
- Kosher salt to taste
- Freshly ground black pepper to taste
Preparation
- Step 1
Bring a large pot of salted water to a boil. Add the pasta, and cook for 8 to 12 minutes, until done.
- Step 2
Heat the oil in a medium-large frying pan over medium heat. Add the onions, and stir to coat in the oil. Cook, stirring occasionally, for 2 minutes. Add the mushrooms and garlic. Cook, stirring occasionally, for 3 minutes. Add the tomatoes and cook for 5 minutes, or until the tomatoes have collapsed. Stir in the lovage, and cook for 2 more minutes. Season with salt and pepper.
- Step 3
Drain the pasta, and add it to the frying pan with a little of the pasta cooking liquid. Toss to coat, and cook for 1 or 2 minutes.

A full pound of pasta is way too much. Half a pound is more appropriate. Also lovage is quite a bit stronger a flavor than parsley. Go easy. You can always add more.
I didn’t read the note about using half the pasta, so I found the amount of sauce was too little. Also, it needed a bit of Oomph, so I sprinkled on several shakes of dried oregano and dried basil. Tasted better after that!
This was so easy and delicious! Finally, a good use for my lovage patch. I didn't have mushrooms but didn't miss them. Used 2 T of olive oil and cooked the onions a little longer than she said. Also, I just made 1/2 lb. of pasta for two people and that seemed like the right amount for the sauce. Otherwise, I just followed the recipe.
