  • 1small spaghetti squash, about 2 pounds
  • Water
  • Salt to taste
  • ¼cup fresly grated Parmesan cheese
  • Meat Sauce (see Basic Meat Sauce recipe)

Preparation

  1. Step 1

    Cut the squash into quarters. Remove seeds and fiber that clings to the seeds. Place in a pot with enough water to come up to just below the cut surface of the squash.

  2. Step 2

    Cover and boil until squash is tender, about 20 to 25 minutes. Check occasionally to be sure water has not boiled away; drain.

  3. Step 3

    Heat meat sauce to a simmer. Serve squash topped with meat sauce and Parmesan cheese.

Tip
  • There are several ways to cook spaghetti squash: it can be boiled whole and will take 45 minutes to 1½ hours depending on the size. It can be baked whole at 350 degrees and will take 1 hour to 1¾ hours, depending on the size. It can be cut in half and baked, reducing the cooking time considerably. But the method described above is by far the quickest.

I microwaved the spaghetti squash for two minutes, which made it much easier to cut into quarters. Boiling was way faster than baking and made it easy to clean out the fibrous parts and scoop out the "spaghetti." The spaghetti squash still has very little flavor, but that's what the sauce and cheese are for.

Spaghetti …. squash that: tried a few times within different preparation scenarios … really hard to get this vegetable to add anything interesting. Pretty blah and tasteless indeed. I would say you have to be a desperate vegan to use it. I’m done with it.

My husbands favorite meal that I make! Don’t tell him it’s so easy to make :)

It took 40 minutes to cook the squash. Then, when trying to get it to make strands, I realized why I hadn't cooked this again after the last attempt about 20 years ago. Trying to scrape while securing the hot squash somehow was difficult. Way too much trouble! I'll stick with pasta, and let squash be squash.
