Green Beans with Anchovy Butter

Ingredients
- 6 to 8anchovy fillets
- 4tablespoons unsalted butter
- 4pounds green beans, trimmed
Preparation
- Step 1
Rinse anchovies, drain them well, and chop them finely. In a small skillet over low heat, melt the butter. Add the anchovies, and stir until they fall apart and the mixture is smooth. Remove from the heat and set aside.
- Step 2
Steam the green beans until just tender, 7 to 10 minutes, depending on their size. Drain well, return the beans to the pan, and place over low heat. Add the anchovy butter. Stir for a minute or 2 until beans are hot and thoroughly coated with butter. Transfer them to a warmed serving dish, and serve immediately.

The world needs more anchovies. Ask someone if they like these salty little treasures and many people say they don't. But add them as secret sauce to dishes like these beans and people don't know they're there. They just think the dish is delicious and unique.
These are good! Husband commented. I used about a pound of beans, 2 anchovies, 1 T. butter, added pepper and a squeeze of lemon juice at end. Farmers market/garden dinner. Beans, butter lettuce, heirloom tomatoes, and lamb chops from market. Rosemary, garlic , basil and chives from garden. Fast, easy, delicious!
I added a squeeze of lemo and some red pepper flakes. Easy and delicious!
Perfect. Beans can be steamed ahead and warmed in the anchovy butter.
