  • ÂĽteaspoon freshly ground black pepper
  • 2tablespoons white-wine vinegar
  • 2tablespoons lemon juice
  • 1clove garlic, peeled and smashed
  • ½teaspoon mustard
  • 1teaspoon Worcestershire sauce
  • 2anchovies, minced
  • 1egg yolk
  • ½cup extra-virgin olive oil
  • 1head romaine lettuce, washed, dried and cut into ½-inch slices
  • ½cup crisply fried bacon pieces
  • ½cup homemade croutons
  • ½cup grated Parmesan cheese

Preparation

  1. Step 1

    In large bowl, combine salt, pepper, vinegar, lemon juice, garlic, mustard, Worcestershire sauce, anchovies and egg yolk and whisk until frothy. Continue whisking and drizzle in olive oil.

  2. Step 2

    Add lettuce, bacon, croutons and cheese, toss quickly and serve.

Very good! Makes a thinner, but flavorful dressing. The recipe is enough to dress at least double the amount of greens. Will definitely make again!
