  • 1salmon fillet (about 1 pound)
  • Juice ½ lemon
  • 2teaspoons fresh thyme leaves
  • 3tablespoons salt-packed capers, soaked for one hour and rinsed thoroughly
  • 3tablespoons fresh ginger, minced
  • 2tablespoons grape-seed or vegetable oil
  • Freshly ground pepper to taste
  • 2tablespoons chopped chives

Preparation

  1. Step 1

    Pat the salmon dry with paper towels and rub with the lemon juice. Sprinkle with thyme leaves and set aside.

  2. Step 2

    Dry the capers with a salad spinner. Heat the oil in a frying pan large enough to hold the salmon comfortably. Add the capers and ginger and saute for two minutes.

  3. Step 3

    Add the salmon skin side down and cook for two minutes, using a spatula to prevent the skin from sticking to the bottom. Turn and brown on the other side. Stir the ginger and capers from time to time to prevent them from burning. Cook the fish to the desired degree and remove it to a heated serving dish. Spoon the capers and ginger on top. Season with pepper, sprinkle with chives and serve.

Didn’t take an hour - once you’ve prepped the ingredients, cooking time just depends on thickness of salmon.b

Delicious. Have made it twice. It worked better when I used less ginger and capers, so as not to overpower the delicate taste of the fish

Tangy. Very nice. Very easy. Used jarred capers, so didn't do the soak and rinse stage, just drained them.

Do you have to rinse jarred capers?

Easy to make and delicious. Actually, liked the contrast of flavors. Didn’t have chives, not missed, but will try next time. Will add to the ‘salmon’ repertoire.

We rated this three stars, but won't make it again. The unusual combination of flavors was either going to be special ... or not. For us, not. They seemed to compete rather than blend well.
