Yield:Four servings
  • ½teaspoon olive oil
  • 4small red snapper fillets
  • Salt and freshly ground pepper to taste
  • Sweet pepper tapenade (see recipe), not drained and parsley reserved

Preparation

  1. Step 1

    Heat the oil in a large, nonstick skillet. Season the snapper with salt and pepper and add to the skillet. Cook for 2 minutes on each side. Pour tapenade sauce over fish, cover and cook for 5 minutes. Divide among 4 plates, spoon with the sauce, sprinkle with parsley and serve immediately.

This recipe is a keeper! We loved it. Once the sauce was made(not difficult), it was a quick, easy and very tasty dinner. Thank you, Molly, for a great recipe!

A delicious choice for Christmas dinner 2021 with family! I made the red pepper tapenade in the afternoon and then everything came together quickly. Be judicious with the garlic... I tasted the raw sauce and it was way out of balance. However, after heating it up with the fish, the garlic was tamed! One other tip-- I broiled the red peppers and I found that cutting them in thirds or even fourths (if large) gave me a more even char.
