  • 2pounds whole black bass, cleaned and gutted with head on
  • 2cloves garlic, smashed, peeled and halved
  • 3slices fresh ginger, about the size of a quarter, peeled and julienned
  • 1tablespoon dried Chinese black beans
  • 2sprigs coriander
  • 3tablespoons Tamari soy sauce
  • 1tablespoon sesame oil
  • 1tablespoon rice vinegar
  • 2scallions, cleaned; green and white parts cut into 2-inch lengths

Preparation

  1. Step 1

    Slash across the fish twice, on the diagonal, on each side. Place fish on an oval platter 14 by 8 inches.

  2. Step 2

    Place garlic on platter around fish. Scatter remaining ingredients over fish. Cover tightly with polyvinyl plastic (PV) wrap.

  3. Step 3

    Place platter in microwave oven. Cook at 100 percent power (high setting) 11 minutes. Remove from oven. Uncover and serve hot.

I had Chinese black bean garlic sauce and used that instead of soy fermented back beans. Also had just a few small pieces of sea bass filet so cut microwave time in 1/2. Tasted great! Thank you.

Anyone want to share how to make this WITHOUT a microwave oven?

My grandmother used to make this in a basket steamer.
