Here's a virtuous though incredibly flavorful way to prepare any firm white-fleshed fish like cod, halibut or rock fish. Marinate the fish in a bit of fresh ginger and sesame oil then bake in the oven for about 10 minutes. Finish it off with a sprinkling of black sesame seeds, chopped scallions and a few slices of pickled ginger. Serve over a bed of steamed spinach and tender white rice.

  • 4cod fillets, about 6 ounces each (or substitute halibut, rock fish or other firm white-fleshed fish)
  • Salt
  • pepper
  • 1teaspoon finely grated ginger
  • 1teaspoon roasted sesame oil
  • 1teaspoon black sesame seeds
  • 3 or 4scallions, sliced thin
  • Pickled ginger, for serving

Preparation

  1. Step 1

    Season each fillet lightly with salt and pepper. Combine ginger and sesame oil in a small bowl, then rub the mixture on the fillets, massaging with fingers to coat evenly.

  2. Step 2

    Place the fish in one layer in a baking dish, and tightly cover the dish with foil. Let the fish marinate at room temperature for 15 minutes, or refrigerate up to 3 hours and bring to room temperature before baking.

  3. Step 3

    Heat the oven to 400 degrees. Bake the fish on the top rack for 10 minutes. Remove foil and check to make sure the fish is cooked through. Return to oven for 1 or 2 more minutes, if necessary.

  4. Step 4

    Transfer the fish to plates or a serving platter. Sprinkle with sesame seeds and scallions and garnish with a few slices pickled ginger. Serve with stir-fried spinach and steamed rice, if desired.

At least double the sesame oil and the ginger, otherwise there will be no flavor.

I liked the idea of sesame seeds before putting the fillets in the oven - a nice flavor and crunch. I added soy sauce to the marinade and served the fish with a topping of chopped cilantro, shallots, lime juice and olive oil with a side of black rice. The whole family gobbled it up.

Fantastic Asian-inspired fish recipe! Easy, healthy and delicious. Will be making this regularly. Served this with rice, swiss chard sautéed with a little coconut oil and tamari, and a fresh salad with carrots and ginger-miso-sesame dressing.

4/24/2025 Very good! I tasted the sesame oil and ginger marinade after mixing and didn't like it. I was prepared to be disappointed. Happily, magic happened.

The flavor is great. The cooking time is way off. After 10 minutes the fish looked raw. I cooked for 15 more minutes uncovered. I wonder why the foil, and why the top rack.

I absolutely adore this dish - it’s so simple, healthy, quick and delicious. I make it with frozen wild caught cod from Trader Joe’s in the air fryer/mini oven and it works perfectly without any adjustments.
