Mixed Berry and Beet Smoothie

Ingredients
- ½cup freshly squeezed orange juice
- 1cup mixed frozen berries or blueberries
- 2tablespoons granola
- ⅓cup diced beet, either raw or roasted (50 grams)
- ¼cup plain low-fat yogurt or low-fat coconut milk
- 1teaspoon honey or agave syrup
- 2 or 3ice cubes
- sliced orange for garnish (optional)
Preparation
- Step 1
Place all of the ingredients in a blender and blend for 1 full minute. Pour into a glass, garnish with an orange slice and enjoy
- This is best enjoyed right away.

Made this using oats instead of granola, almond milk and used 1 TBS of honey. Considering I hate beets, this was totally palatable and surprisingly refreshing. Will make again!
To make it local and seasonal (Lower Mainland, BC Canada in September) I used apple juice in lieu of orange, oats in place of granola, added a 1/4C cashew milk (to make dairy-free), and skipped the sweetener.
I used a whole orange in place of the orange juice, as well as double the yogurt and a good dollop of peanut butter. I thought it tasted best with frozen blueberries. Delicious!
Really enjoyed this smoothie, loved the flavour and taste. Used oat milk instead of yoghurt and added quick oats instead as that’s what I had on hand. Will definitely repeat as we move through the colder months.
I had some extra boiled beets lying around, so I made this and absolutely loved it. I made a few changes based on what I had available. I used a little bit of raspberry lemonade instead of orange juice, so I didn’t add any extra sweetener. Also used oats instead of granola. And all frozen strawberries because I buy berries when they’re inexpensive/about to turn, and immediately wash and freeze them for smoothies. I used whole milk yogurt and the smoothie was deliciously rich.
