Pineapple can stand alone as a fruit to combine with greens in a smoothie. No bananas are required. I did add a piece of ginger to this smoothie and loved the way it pumped up the flavor. I didn’t use any dairy in this one, just orange juice. And I found that it required no additional sweetener, though you could add a teaspoon of agave nectar or honey if you wish. It’s best to use the pungent, feathery wild arugula for this. I used a baby greens mix that included kale, chard and spinach.

  • ¼pineapple, peeled, cored and cut into chunks (about 6 ounces peeled and cored pineapple)
  • ¾cup freshly squeezed orange juice (or the juice that accumulates after cutting up the pineapple mixed with enough orange juice to make ¾ cup)
  • 2tablespoons raw cashews (about ¾ ounce)
  • ½teaspoon chia seeds
  • ¼cup, tightly packed, arugula (about ¼ ounce)
  • ¾cup, tightly packed (or 3 handfuls – about 1½ ounces) mixed baby greens
  • 1quarter-size slice ginger, peeled
  • 2 or 3ice cubes

So tasty! I've made this again and again. The spiciness of the ginger is a great compliment to the pepperiness of the arugula. To increase fiber, lately I have been swapping out the orange juice for 1/2 of an orange, and use water as my liquid instead. It's still plenty sweet for me. If the greens taste a little too green for me that day, adding the tiniest bit (1/2-1 tsp) of apple cider vinegar seems to help balance them.

This was delicious! And I don't love smoothies. I added a squeeze of fresh lime juice which brought out the brightness.

This was a success and I hope to make it again, but I altered the recipe somewhat due to what was on hand: had to use spinach, not arugula, so got a milder result. Lime juice tried by another writer would have been good, but saw the note too late. I used frozen pineapple juice concentrate mixed with water to make 3/4 cup and added 1/4 tangerine (with its thin skin) and one large basil leaf. I'll make it the same way next time, except I'll use arugula, not spinach.

I love this - more than I thought I would based on the ingredients. Is there a nutritional recap somewhere?

How many days will this keep in the fridge?

I added pistachios and avocado because I didn’t have cashews, and sorrel kale and lettuce instead of arugula because it is what I had. Still delicious but I look forward to trying it more on a riot in future
