Watermelon Cucumber Punch

Ingredients
- 1¼pounds fresh seedless watermelon cubes
- 2Kirby cucumbers, peeled and cut into chunks
- 4ounces fresh lemon juice
- 2ounces agave syrup (see note)
- 1ounce aloe vera juice (see note)
- Thinly sliced cucumber rounds, for garnish
Preparation
- Step 1
In a blender, purée watermelon until smooth. Strain and set aside 12 ounces juice.
- Step 2
Add cucumbers to blender with 1 tablespoon water. Purée until smooth. Strain and set aside 1 ounce juice.
- Step 3
In a cocktail shaker, combine watermelon juice, cucumber juice and all other ingredients. Shake well. Pour into ice-filled rocks glasses and serve, garnished with cucumber rounds.
- Aloe vera juice and agave syrup are available in health food stores.

What are Kirby cucumbers? Would English type work?
Kirby are usually used for pickling, their seeds are small. English cucumbers would be a fine substitute. Better a late response than none at all!
FANTASTIC! Used with regular cucumber. We all agree we can taste all the elements—watermelon, cucumber, lemon. Great with a little muddled mint too. Makes great mixer for adult beverages, if so inclined.
Too bad I didn't see the note below about adding muddled mint before I made this. I doubled it and used regular cucumbers, and made the whole thing in my juicer. Delicious, I used less agave syrup though, still plenty sweet.
Really enjoyed this! Think of what your brain wants from “watermelon juice” (as compared to the actual fruit juice), coupled with a smooth, lingering finish with the cucumber and aloe vera. The lemon juice (I needed 4 lemons ) adds great brightness throughout. I’m hoping to serve small iced glasses with a cucumber and mint garnish as a welcome drink for a hot BBQ. One tip: you’re going to make a little mess on your counter to get this elixir, so go ahead and make a double batch.
