Watermelon Lemonade

Ingredients
- 1½pounds watermelon (about ½ small watermelon)
- 1cup sugar
- 1cup freshly squeezed lemon juice, pulp and rinds reserved (from about 12 lemons)
- Vodka (optional)
Preparation
- Step 1
Peel the watermelon and cut the flesh into large chunks. Purée them in a blender until smooth. Pour the purée through a fine-mesh strainer, and discard the solids.
- Step 2
Pour the strained watermelon into an ice-cube tray (plastic, not silicon). Freeze until solid.
- Step 3
Make simple syrup: In a small saucepan combine sugar with 1 cup water, and place over medium heat. Cook, stirring, until sugar dissolves. Remove from heat and chill.
- Step 4
In another pot bring 6 cups water to a boil. Remove from heat, and add lemon rinds and pulp. Cover, let steep for 10 minutes and then strain.
- Step 5
Combine strained liquid in a pitcher with lemon juice. Refrigerate until ready to serve. (Fruit mixture and simple syrup can be refrigerated separately for a couple of days, until needed.)
- Step 6
Before serving, add simple syrup to taste, and add vodka to make it boozy if you like. Serve in glasses over the watermelon ice cubes.
- This recipe makes more simple syrup than you will likely need. Store in the refrigerator and use in other drinks.

Does anyone know why silicone ice cube trays can't be used?
I tried using silicone tray, and when I twisted it to remove the cubes, they were crushed (and I am definitely not superwoman). Ended up with slush instead of cubes.
How many drinks does this recipe make, and, specifically, how much Vodka or Gin should be added?
delicious - made without booze, but selection of gin, vodka and rum, allowed quests to spike up as they preferred.
Made this with just lemons & simple syrup to the taste of my son. Sweetness factor definitely changes as it cools (need to add more syrup-good lesson for my budding gourmand that cold dishes need more seasoning). Found using the lemon peels in water really amped the overall flavor w/out contributing bitterness, a cooked flavor, or other negatives. Nice, simple recipe from which to explore other flavor combos.
I used agave to sweeten each glass, as it is easily dissolved into the drink and compliments the citrus.
