Preparation

  1. Step 1

Put 1 cup water, 1 cup sugar and a small bunch of basil in a small saucepan. Boil until sugar dissolves, discard the basil and chill. Peel 1 small watermelon (3 pounds), and cut the flesh into large chunks. Purée them in a blender until smooth. Pour the purée through a fine-mesh strainer, and discard the solids. Combine the juice with the chilled basil syrup and about ½ cup gin. Serve over ice.

The problem with this recipe is that it doesn't offer a proper ratio of ingredients. However, once the ratio has been solved for, this drink is a smash hit.

3 parts watermelon juice
2 parts gin
1 part basil simple syrup

I wanted to make a pitcher of this for a brunch. After reading the comments, I addressed the bland/too sweet objections by adding fresh strawberries, pureed and chunked, plus a couple limes, and leaned heavy on the ratio of Sapphire gin. This really punches up the flavor, but also overshadows the basil, so adjust accordingly (like x2-3). The pitcher was empty before the food was served, and it's already been requested for the next one, so cheers.

Can anyone give me an idea of what a small bunch of basil translates to in terms of a cup or portion of a cup?

Definitely needs either lemon or lime juice. With that addition, it's delicious!

The alcohol was a bit strong for me and the watermelon juice did not have enough flavor to punch it up, so I combined other peoples’ suggestions for a super tasty version: 1 part basil simple syrup 1 pert lime juice 3 parts gin 3 parts watermelon juice Yum!
