Preparation

  1. Step 1

    Heat the oven to 400.

  2. Step 2

    Wash 2 pounds beets, wrap each in foil and put on a baking sheet.

  3. Step 3

    Roast until a knife pierces each with little resistance, 45 to 90 minutes.

  4. Step 4

    When the beets are cool enough to handle, peel, and cut into chunks; toss with pine nuts, shaved Parmesan, lemon juice, olive oil.

  5. Step 5

    Garnish: Parsley.

Perfect for fresh beets. The flavor just jumps out of each bite. I toasted pine nuts (probably used 1/4 cup), used a whole lemon, and added salt. Wonderful!

Perfect. I roasted a big basket of beets, peeled them, and froze in small batches. They defrost beautifully whenever I want a quick hearty salad.

Had beets, shaved parm and pine nuts so I made this a couple nights ago. Roasted the beets in a low enameled cast iron pan with the lid on and some EVOO for apprx 50 mins (apprx 8 small/medium-sized beets). My husband liked it, but requested more vinegar, per personal preference, so I added a splash of apple cider vinegar. Would recommend adding the shaved parm at the end atop the beets and not stirring it in, neon cheese isn’t all that appetizing to look at.

Added chili crisp. Garnished with cilantro instead of parsley. Yummy

I know changing recipe is not the idea of this but…I received fresh beets in my farm box and wanted to make a light meal of it and not necessarily a side so I added a few things. I added quinoa and fresh orange slices. For the dressing I used EVO, fresh lemon juice, orange juice, grated orange rind and a bit of mayo, salt and pepper. I tossed everything and then added the shaved Parmesan. The pine nuts, parsley, parmesan all came together. It was fantastic.
