Roasted Beets With Moroccan Spices

Ingredients
- 1pound beets
- 1pound carrot chunks
- chopped almonds
- ½teaspoon of cumin
- ½teaspoon of coriander
- a pinch of allspice
- lemon juice
- olive oil
Preparation
- Step 1
Heat the oven to 400.
- Step 2
Wash 1 pound beets, wrap each in foil and put on a baking sheet.
- Step 3
Put 1 pound carrot chunks on the baking sheet and toss with olive oil.
- Step 4
Roast until a knife pierces the beets with little resistance, 45 to 90 minutes, and the carrots are tender and browned (remove when done; before the beets).
- Step 5
When the beets are cool enough to handle, peel, and cut into chunks; toss them and the carrots with chopped almonds, ½ teaspoon each of cumin and coriander, a pinch of allspice, lemon juice and olive oil.
- Step 6
Garnish: Mint.

I took a different approach to roasting. Peeled and cut 3/4" cubes with the raw carrots and beets, tossed with a little olive oil, salt, pepper, and then roasted for 35 min at 400 deg until soft and browned. After they cooled to warm, I tossed with 2x the amount of spices and the recommended amount of lemon juice. This approach created more surface area to create that wonderful caramel-like browning. The beets and carrots finished at the same time.
I would add more lemon. I like the flavoring of the spices. Kids even ate this--pretty good! Also I used red beets and golden beets. Nice color addition.
I made this for dinner served hot over brown rice. Scrubbed beets well and cut them up, as I did the carrots. Roasted all on baking sheets without removing skins with oil salt, garlic powder and pepper. Temp 375. When done, about 45-55 mins added cumin and coriander and poured on lemon and added crumbled feta cheese. Topped with toasted almond slices. Yummy. Great Vegetarian meal.

I toasted my almonds in a pan with a little olive oil. Added a bit of smoky flavor. Super yummy dish. Everyone loved it! Thank you.
