  • 2pounds beets
  • greens
  • ½cup chopped smoked ham hock
  • 1tablespoon butter
  • ½cup beer

Preparation

  1. Step 1

    Peel beets, and chop them into 1-inch chunks; roughly chop greens. Put both in a saucepan with smoked ham hock or ham steak, butter and beer.

  2. Step 2

    Bring to a boil, then reduce to simmer. Cover, and cook until the beets are tender and the greens wilted, 20 to 25 minutes. Boil off any excess liquid. Garnish: Caraway seeds.

I made this last night with golden beets - it was super delicious. I also cut up carrots and added frozen peas. For the beer, I used an Oktoberfest that happened to be in the fridge. My husband and Aunt loved it - all plates were devoid of crumbs when we were done.

Made this. It is not a recipe for enjoying - this is a recipe for lying down and avoiding.

Wondering what a smoked ham hock, or any ham hock, is...

Does this refer to beet greens? Or any greens like spinach, for example?
