Ingredients
Yield:100 servings
- 2pounds bacon, sliced
- 13½quarts canned whole kernel corn
- 1½tablespoons salt
- 1½teaspoons pepper
- ¾cup canned pimentos, drained and finely chopped
- 1½quarts chopped green peppers
- 4½cups chopped onions
- 1¼cups melted shortening or salad oil
Preparation
- Step 1
Cook bacon until crisp. Set aside.
- Step 2
Drain corn; mix with salt, pepper and pimentos. Saute peppers and onions in shortening until tender. Add to corn mixture.
- Step 3
Cook corn mixture over medium heat until hot, stirring constantly.
- Step 4
Crumble bacon. Add to corn mixture. Mix well.
