  • 2pounds lean ground beef
  • 2eggs, beaten
  • ½cup Italian-style bread crumbs
  • 1cup tomato juice
  • 1teaspoon salt
  • ¼teaspoon garlic powder
  • ¼teaspoon black pepper
  • ½teaspoon oregano
  • Dash of cayenne pepper
  • 1tablespoon vegetable oil
  • 1large onion, minced
  • 3 or 4thin slices boiled or baked ham
  • ½pound mozzarella cheese, grated

Preparation

  1. Step 1

    Preheat oven to 325 degrees.

  2. Step 2

    In a bowl, combine the ground beef, eggs, bread crumbs, tomato juice and seasonings.

  3. Step 3

    In a skillet, heat the oil and saute the onions until translucent, about 5 minutes. Add to the meat mixture; mix lightly. Turn mixture out onto a sheet of foil and flatten into an oblong shape, about 1-inch thick.

  4. Step 4

    Place ham slices on meat, keeping them about 1 inch from the edge. Sprinkle grated cheese over ham.

  5. Step 5

    Begin to fold the meat from one side to the other, rolling as you go. Pinch the ends to seal when the roll is complete. Turn loaf from foil into a greased 9-by-5-by-3-inch loaf pan. Bake for 60 to 75 minutes.

I remembered this gem from way back when, and am looking forward to making it again this weekend. But while I recall replacing the tomato juice with spicy-hot V8, and the ham with prosciutto, would it simplify matters to freeze the mozz before grating it?
