Ingredients
Yield:four servings
- ¾cup vegetable oil
- ¼cup red-wine vinegar
- 2cloves garlic, crushed
- 2small shallots, chopped
- ½teaspoon freshly ground pepper
- ¼cup Dijon mustard
- ¼cup Pommery mustard
- ½cup maple syrup
- Salt to taste
- 12ounces fresh spinach
- 5sliced mushrooms
- 1red onions
- 4strips maple-cured bacon, sauteed until crisp
- 2hard-boiled eggs, quartered
Preparation
- Step 1
Whisk together the oil, vinegar, garlic, shallots, pepper, mustards, syrup and salt. Place remaining ingredients in a large salad bowl and toss with the dressing.

Too sweet for me as written, but with salt and a few dashes of Cholula hot sauce, it came together well. Served with NYT Dijon and Cognac Beef Stew (which also features Dijon and Pommery mustards) -- a yummy winter meal.
