  • 1pound hot Italian sausage, casings removed
  • 1medium onion, peeled and thinly sliced
  • ½cup chicken broth, homemade or low-sodium canned

Preparation

  1. Step 1

    Bring a large pot of lightly salted water to a boil. Add the broccoli rabe and blanch for 1 minute. Drain and set aside.

  2. Step 2

    Place the sausage in a large skillet over medium-high heat. Cook, breaking up the sausage with the back of a fork until crumbly. When the sausage begins to release its fat, add the onion and cook, stirring frequently, until the sausage is browned, about 7 minutes. Pour off as much of the fat as possible.

  3. Step 3

    Reduce the heat to medium and stir in the chicken broth. Lay the broccoli rabe over the sausage, season with the salt and pepper, cover with a lid and cook until the broccoli rabe is tender, about 10 minutes.

  4. Step 4

    Divide the broccoli rabe among 4 plates. Spoon the sausage and broth over it and serve immediately with roasted potatoes.

Simple, quick, but a lot of flavor. I steamed the broccoli rabe in the microwave rather than blanching in boiling water to save a little more time, and not have another pot to wash. (I chopped the stems off first, and steamed them for longer than the tops.)

This was absolutely delicious. I made half the amount for two but still used a medium onion. I followed a previous suggestion to blanch the broccoli rabe in the microwave. I did not have Italian sausage so I substituted 4 kosher franks which I sliced thin and browned on both sides. Yummy, easy, and kosher besides.

Have now made it twice with Beyond Neat vegan sausage and no-Chicken broth. Excellent.
