Preparation

  1. Step 1

    Trim the artichoke with a serrated knife: cut the stem flush with the bottom of the artichoke; cut 1 inch off the top of the artichoke, and trim off the prickly leaf tips. As you work rub cut surfaces with the lemon half to keep them from discoloring.

  2. Step 2

    Place each artichoke in a microwave cooking bag, closing the bag tightly, or on a six-inch sheet of PV plastic wrap, folding the plastic to enclose the artichoke and sealing it tightly. Arrange the artichokes in a ring on the microwave carousel or on a large plate. Cook at 100 percent power (high setting). In a full-size oven (600 watts or more), one artichoke will take 9 minutes, two 11 minutes, and four 15 minutes. In a small oven (under 500 watts), one artichoke will take 12 minutes and two 20 minutes. Four won't fit in a small oven.

  3. Step 3

    To check for doneness, press the bottom of an artichoke with a fingernail; it should give. Remove from the oven. Let stand 5 minutes. Prick the plastic with a knife to release the steam. Unwrap carefully.

An important difference in the recipe comes from Tejal Rao in today's "The Veggie" newsletter (Thanks Tejal!): "Place the artichoke in a microwave safe bowl with a fitted lid." This is so much better than using a plastic microwave cooking bag. It's better for the environment and I have found it seems to cook the artichoke more evenly.

So then there is no water used when cooking artichokes in a microwave ? This sounds so much faster and easier than boiling in a water bath!

Lately I've been quartering my larger artichokes and cutting out the choke before microwaving using these directions for smaller ones. (Have had her cookbook for years and mostly use it for this!) Then I throw the pieces on the grill for a few minutes to char.

The timing is set for your average large artichoke. Supermarkets are now selling jumbo artichokes, and you will have to adjust accordingly. It may take up to 15 minutes to cook one jumbo. But it tastes fine and saves a lot of bother of getting out the double boiler.
