Grilled Salmon With Sage

Ingredients
- 1salmon fillet, about 1½ to 2 pounds
- 2lemons
- 2tablespoons Dijon mustard
- ½cup olive oil
- Freshly ground pepper to taste
- About 24 sage leaves
- Coarse sea salt to taste
Preparation
- Step 1
Wipe the salmon fillet dry with paper towels. Combine the juice of one lemon, mustard, two tablespoons olive oil and pepper in a small bowl. Chop six sage leaves and add them. Mix thoroughly and spread the mixture on both sides of the salmon. Allow to marinate about 30 minutes.
- Step 2
Meanwhile, preheat grill or broiler. Heat the remaining olive oil in a small frying pan and saute the sage leaves until they are crisp. Drain them on paper towels.
- Step 3
Season the salmon with salt and grill or broil the fillet about six minutes on each side or until it reaches the desired degree of doneness. Sprinkle with sauteed sage leaves, garnish with remaining lemon cut into quarters and serve.

This was easy and delicious. I wouldn't have thought of using sage with salmon but it was excellent. If you are looking for a different recipe for salmon this is a good one to try.
Really delicious marinade, 60 min. Sage garnish important. Grilled skin side down in broiler for 10 min and result was perfect.
Marinating salmon in lemon juice is not a good idea. The meat was tough and tart. And I used very good quality salmon. Lemon should be employed optionally as a dressing by the diner.
This is so delicious …used frying pan to sear salmon after marinating, crisping up the skin - really really good…the sage leaves are important, for me, it makes the dish… Thank you Moira
Only 1 of these notes is actually relevant to cast iron pan. Couldn’t change it
