  • 2tablespoons butter or vegetable oil
  • 1cup coarsely sliced onion
  • 1teaspoon minced garlic
  • 1small head firm cabbage, coarsely shredded, about 5 cups
  • 1medium-size apple, peeled, cored and cut in thin slices
  • 1tablespoon white vinegar
  • 1teaspoon caraway seeds
  • ½cup fresh or canned chicken broth
  • Salt and freshly ground white pepper to taste

Preparation

  1. Step 1

    Melt the butter in a skillet and add the onion and garlic. Cook, stirring, until wilted. Do not brown. Add the cabbage, apple, vinegar, caraway seeds, chicken broth, salt and pepper.

  2. Step 2

    Bring to a boil, stir, cover and simmer for 15 minutes. Uncover and if there is too much liquid, reduce it accordingly.

Love this is great with roast or grilled pork. It also works well with sausages. I do try to ensure the cabbage does not overcook so it retains its texture.

Loved it! The consistency was perfect in about 7 minutes.

It was a harmonious side dish to seasoned pork chops. Neither overwhelmed the other.

Delicious! I’m not sure how long I cooked this, but it was definitely longer than called for. It has great flavor and texture.

I was out of caraway seed so used fennel instead and the flavor was nice. I've since prepared with caraway and prefer that flavor combo, but in a pinch, fennel seed is a fine substitute.

Great weeknight dish. Made it with local Italian sausage, so skipped the caraway.
