Tortellini With Ham and Cream Sauce

Ingredients
- 4quarts water
- Salt to taste if desired
- 3tablespoons olive oil
- ½cup finely chopped onion
- 1tablespoon finely minced garlic
- ½pound cooked ham, cut into ½-inch cubes
- ½pound zucchini, ends trimmed and cut into ½-inch cubes, about 2 cups
- 1¼pounds red ripe tomatoes, peeled and cut into ½-inch cubes, about 3 cups
- 1teaspoon finely minced, seeded hot green pepper, optional
- 19-ounce package fresh or dried cheese tortellini
- ½cup heavy cream
- 2tablespoons freshly grated Parmesan cheese
- ⅓cup finely chopped scallions
Preparation
- Step 1
Bring the water to a boil and add salt.
- Step 2
Heat the oil in a skillet and add the onion and garlic. Cook briefly until wilted. Add the ham and cook, stirring, about 1 minute. Add the zucchini and cook, stirring, about 1 minute. Add the tomatoes and cook about 5 minutes. Add the pepper and continue cooking about 5 minutes.
- Step 3
Meanwhile, add the tortellini to the boiling water and cook about 5 to 8 minutes or to the desired degree of doneness. Scoop out and reserve ¼ cup of the cooking liquid. Drain the tortellini.
- Step 4
Add the reserved ¼ cup cooking liquid to the sauce, along with the cream and cheese. Stir. Add the tortellini and blend well. Sprinkle with scallions and serve.

This was a fantastic “comfort” meal! I will definitely make this again! To be honest, I made this to use up some Christmas ham. Used what I had at home, not because I didn’t want to follow the recipe. Light cream vs heavy cream. I used canned diced tomatoes (drained). (Let’s face it, canned tomatoes taste just as good as “grocery store tomatoes” in January! 😊) No zucchini and didn’t miss it.
This has been in the family rotation for 30 years. Only change suggested is to B brown the ham and the zucchini and then add the onions and garlic.
This was delicious and quick on a Monday night - without ham (my family is vegetarian) and with “so-so” supermarket plum tomatoes. We had a large package of tortellini from Costco, and the veggie amounts as written worked just fine. Added a little more water and cream to account for the larger amount of pasta. Will def make again!
