Preparation

  1. Step 1

Peel the papaya and cut in half lengthwise. Scoop out the seeds with a spoon. Grate each half into thin strips into a bowl containing the lemon juice. Use either a hand grater or the grating disk of a food processor. Toss with the juice to prevent discoloring. Mix the papaya with the vinaigrette. Season to taste with the Tabasco and pepper. Allow to marinate at least 30 minutes before serving.

If you are ever told to grate papaya in long strips, and there is no photo, trust your instinct... this won’t work. I tried and end up with papaya mush. Blended it to make a dressing but still to thick. Used it as a weird dip... flavors aren’t bad but just chop the papaya.

I had not realized there was such a thing. According to Mr. Google, shredding it with a grater or disc on a food processor and then "massaging" with salt and sugar, as a westerner would do with carrots and Asians with daikon will bring out a cucumber-like flavor with a crisp texture. This is one of those recipes that could use a video.
