Preparation

  1. Step 1

    Preheat oven to 375 degrees

  2. Step 2

    Peel the apples, cut them into quarters and core them. Butter an eight-inch baking dish with the two tablespoons of butter. Arrange the apple slices in the dish. Add the lemon peel and sprinkle on the cinnamon.

  3. Step 3

    Cut the remaining butter into pieces. Combine the sugar, butter and flour, either in a mixing bowl or in a food processor, using a steel blade. If using your fingers, blend the mixture until it has the texture of coarse breadcrumbs.

  4. Step 4

    Sprinkle the mixture over the apples. Bake for 40 minutes, or until the top is golden brown.

Tip
  • This is good with creme fraiche or heavy cream.

I baked four individual apple crumbles in 220 ml Weck tulip glasses. I cut the apples very fine and mixed some leftover blueberries with them. I filled the glasses about half full and also added 5 ml of schnapps to the mixture (I was out of calvados, so used apricot schnapps). For the topping, I mixed 125 ml of rough oatmeal, 75 ml brown sugar, some cinnamon and ground cloves in a food processor with enough butter (about 100 ml) to make a dough that stuck together. Bake 25 min at 170C

The 8 inch pan is misleading. I took it to be an 8 x 8 and 6 apple slices needed more room so I used an 11 inch oval in addition. It took more than 40 minutes in my microwave/convection to turn golden. Be careful not to over blend the sugar, flour and butter. I am not sure the ratio of butter to sugar to flour is correct. I once had a similar recipe and I added amaretto for additional flavor.
