  • 1pound asparagus, stalks trimmed and cut diagonally into 1-inch slices
  • 2tablespoons peanut or safflower oil
  • 1clove garlic, minced
  • 3scallions, finely chopped
  • 1teaspoon fresh ginger, minced
  • 1pound scallops
  • 1teaspoon cornstarch mixed with 1 teaspoon dry sherry or water
  • 1tablespoon soy sauce
  • 1tablespoon sesame oil
  • 2tablespoons toasted sesame seeds

Preparation

  1. Step 1

    Steam the asparagus for one to two minutes until al dente. Remove from heat and set aside.

  2. Step 2

    Heat the oil in a wok or large frying pan. Stir-fry the garlic, scallions and ginger for one minute. Add scallops and the asparagus and stir-fry for 30 seconds. Add the corn-starch mixture and bring to a boil.

  3. Step 3

    Add the soy sauce and sesame oil with the sesame seeds. Toss mixture well and serve.

Tip
  • This stir-fry dish goes well with rice.

6/1/17 There are some significant flaws with this recipe, primarily the fact that there is not enough liquid in it. When the directions say to add the cornstarch and boil, there is no liquid to boil. I added dry white wine to the pan before that step, and it was still seriously dry. A little water toward the end still yielded no sauce of any kind. The flavor is also one dimensional, and lacks interest.
