Ingredients
- Vegetable oil spray
- 1pound ground turkey breast
- 1small onion, peeled and diced
- 1green bell pepper, cored, seeded, deribbed and diced
- 1cup dried bread crumbs, preferably whole wheat
- ½cup, plus 2 tablespoons, tomato sauce
- 2egg whites
- 1tablespoon Worcestershire sauce
- 2teaspoons salt
- Freshly ground pepper to taste
Preparation
- Step 1
Preheat the oven to 350 degrees. Spray a baking sheet lightly with vegetable oil and set aside. Place all ingredients in a large bowl and use your hands to mix gently until well combined.
- Step 2
Shape the turkey mixture into a loaf and place on the baking sheet. Bake until firm to the touch, about 40 minutes. Cut into slices and serve with mashed potatoes and mushroom gravy.

i've made this many times, and I started to saute the onions before I added them to the turkey and made the loaf. liked it better than just adding the onions raw.
This is a very tender and tasty, if basic meatloaft. I used ground turkey thigh - 1/4 cup tomato sauce and 1/4 cup ketchup - 1 whole egg and 1 egg white - half dried italian bread crumbs and half plain panko. I mixed veggies and egg first and then added bread crumbs in order to avoid over mixing. This will definitely become a staple in my house.
I have never had any luck with turkey meatloaf but this one works and it's easy! I used ground turkey which is a mix of light and dark and a bit more moist. A half a green pepper is enough for my taste. It was delicious. Would do again in a nanosecond.
Super easy and just the right consistency if you don't overmix. This is a keeper. I did want a couple of other flavors. I added a couple of finely chopped T. of celery, a minced garlic clove, and a shake of oregano and thyme. Wonderful. Ate with mashed potatoes. What's not to like?
Rather than using green pepper, I chop and add red yellow pepper. Makes it zing just a tad more.
Very good basic recipe to jump from. kept everything the same but, Made with ground dark meat chicken , tablespoon of french mustard ( no tomato paste ), thyme from the garden, parsley, two whole eggs. swapped the pepper for chopped carrots. Was very good . prep and cook time was 1 hour 15 minutes , doable for a week night.
