Greek Cauliflower Dip

Ingredients
Yield:Four cups
- 2large heads cauliflower, cut into florets
- 6cloves garlic, peeled
- 3cups chicken broth, homemade or low-sodium canned
- 3ounces feta cheese
- 1teaspoon dried oregano
- 1teaspoon salt
- ā teaspoon freshly ground pepper, plus more to taste
Preparation
- Step 1
Place the cauliflower, garlic and chicken broth in a deep saute pan. Bring to a boil. Reduce to a simmer. Cover and cook until , about 50 minutes. Drain.
- Step 2
Place the cauliflower and garlic in a food processor. Puree until smooth. Add remaining ingredients. Process until smooth. Serve with crackers.
