This is the best-selling summer cocktail at Ralph Lauren's Polo Bar in Manhattan, where it is regarded as "summer in a glass." A critical ingredient is French grapefruit liqueur, or pamplemousse, a relatively new spirit that contributes aroma, a touch of sweetness and a bitter edge, even in a small dose. Preparation

  1. Step 1

    In a large wine glass, combine the grapefruit liqueur and Royal Combier. Add the wine and Champagne. Add a few ice cubes and stir.

  2. Step 2

    Twist the grapefruit peel over the drink to release oils, then drop it into the cocktail.

I'm going to look for the grapefruit liqueur, which may be hard to find in Canada, because I want to try this. But you can make a different but also great cocktail with about 2 parts rosé to one part grapefruit juice. Muddle some mint with a bit of sugar syrup, shake everything with some ice, strain and garnish with mint.

I would just up the proportions of all the ingredients to fit a pitcher (so keep the proportions compared to each other the same but just up the overall amounts) just omit the champagne. And when you serve them via pitcher to each person top each of their glasses off with the champagne

Love this drink! Everyone should try!! Proportions good. Please use a decent rose and champagne. We used Whispering Angel rose, les Mesnil champagne and Griffard Pamplemousse. Nice to taste summer in January and perfect for Valentines Day.

This is incredible and everyone who has every tasted one, loves it too!

Used Cointreau instead of grand marnier and no grapefruit liqueur. I used a grapefruit soda mixer (fever tree.). It was great!
