With its lemon and honey, this drink is a summery version of a hot toddy.

This cocktail was lovely and refreshing, but I recommend making a simple honey syrup. When you put honey into a cold beverage, it hardens, but if you dissolve the honey in a bit of warm water, it blends much better. Just add a little more than the recipe calls for because it is diluted. Or not, you can adjust to taste! I also added a sprig of mint for garnish. Cheers!

This drink is also wonderful with Tom Cat Gin from Middlesex Vermont. It’s made with honey.

switch out the rum for gin and you have a bee's knees! also definitely make a honey simple syrup - 1:1 ratio microwave for 15 seconds

Did it with honey syrup and that worked. I’d be curious to try it with tequila instead of rum. It might add more contrast
