Ingredients
Yield:Enough for a 12- to 14-pound turkey
- 12tablespoons unsalted butter (1½ sticks), softened
- 3fat garlic cloves, minced to a paste
- 2tablespoons chopped sage
- 1habanero, Scotch bonnet or serrano chile, seeded and finely chopped
- 1tablespoon chipotle chile powder
- 1½teaspoons black pepper
- ½teaspoon crushed red chile flakes
Preparation
- Step 1
In a bowl, mash together all the ingredients until smooth. Chill for up to two weeks before using.
