Ingredients
- 2cups sugar
- 1large bunch chamomile or 2 chamomile tea bags
Preparation
- Step 1
Place 2 cups of water in a pot over high heat and add sugar. Bring to a boil, stirring until it dissolves. Add chamomile or tea bags and turn off heat. Cover and let syrup cool.
- Step 2
Strain syrup into a bowl. Cover and refrigerate. Use within five days.

I grow chamomile in the backyard, so have lots. I put about 2/3 cup in a quart of water and made sun tea. Then I put it in a pot, brought it to a boil and dissolved 1.5 c sugar in it. I then strained it, but at the end had a small tea strainer full of sweet chamomile flower head pulp that tasted like heaven. I put it back in the syrup and refrigerated. Family kept tasting it from the jar. Later we re-steeped it for about 10 min and strained - it turned the loveliest gold color.
I made a cocktail using this recipe and now I have leftover. Are there other recipes that use this syrup? Preferably not cocktails.
