Thai Basil Bliss

Ingredients
- 5Thai basil leaves
- 4inch-wide cubes pineapple
- 1tablespoon simple syrup
- 2ounces blanco tequila
- 1½tablespoons lime juice
- Soda or seltzer
Preparation

In a cocktail shaker, crush 4 basil leaves and the pineapple to a pulp with a muddler or wooden spoon. Fill shaker about halfway with ice and add simple syrup, tequila and lime juice. Shake well and strain into a cocktail glass. Top with a splash of soda and float last basil leaf on surface.

This made a tasty drink but the simple syrup congealed around the ice in the shaker and stayed there when we strained the drink. So a bit of sweetness was infused--but not much. It was definitely not too sweet. I did like the tart flavor but am inclined to experiment, either thinning out the syrup or instead using heavy syrup from canned pineapple to get a somewhat sweeter flavor.
Complex, pleasantly funky mix of flavors. I added a little extra lime juice because it seemed a bit too sweet. Next time I would start with less simple syrup.
Think the tequila overpowers the basil and pineapple. Better with vodka.
Substituted w/ standard basil & fresh key limes to clean out the fridge. My guests loved it! Looking forward to trying the original recipe.
I hate cocktails and I love this. Added no simple sugar because really it's unnecessary and this was perfection.
I love drinks made with tequila and this has become a new favorite. I used 1t powdered sugar in place of the simple syrup. Genovese basil works well if you don't have Thai basil.
