Preparation

  1. Step 1

    Form 4 patties of about 3 inches in diameter and ¾ inch thick. Do not handle the meat more than necessary or the texture will be ruined.

  2. Step 2

    Blend the chili powder, pepper and salt together. Sprinkle mixture over each side of the patties.

  3. Step 3

    Heat a cast-iron skillet. Place meat in skillet and grill 3 to 4 minutes on each side over high heat, depending on the desired degree of doneness.

  4. Step 4

    Preheat broiler.

  5. Step 5

    Transfer patties to a warm serving plate. Place 1 ounce of cheese on the center of each pattie and place under broiler for about 30 seconds. Top with chives and serve immediately.
