Ingredients
Yield:Eight servings
- ¼red bell pepper, minced
- 1cup minced Italian flat-leaf parsley
- ¼teaspoon cayenne pepper
- 2gherkin pickles, minced
- 3tablespoons capers, rinsed and minced
- 1cup olive oil
- 1tablespoon white-wine vinegar
- ½cup mashed potatoes
- Salt and freshly ground black pepper to taste
Preparation
- Step 1
Combine the bell pepper, parsley, cayenne, gherkins, capers, olive oil and vinegar in a bowl and stir to combine. Add the mashed potatoes and beat to combine. Adjust seasoning with salt and pepper to taste and serve with the boiled meat and vegetables.
