Yield:About 2 to 3 cups
  • 4ripe avocados
  • ½cup finely chopped red onion
  • 2medium tomatoes, seeded and chopped
  • 1 to 2fresh green chilies (according to taste), seeded and chopped
  • ½cup fresh coriander, chopped
  • ¼ to ½cup extra-virgin olive oil
  • Coarse salt and freshly ground pepper to taste
  • Juice ½ lime or lemon

Preparation

  1. Step 1

    Halve and pit the avocados. Skin the halves, cut them into small pieces and place in a bowl. Add the remaining ingredients, except the lime juice, and mix together lightly, so that the mixture is slightly chunky.

  2. Step 2

    Squeeze the lime or lemon juice over the top and serve.
