Yield:4 cocktails
  • ½red onion, very thinly sliced into ribbons
  • Kosher salt
  • ¼cup red wine vinegar
  • Dry vermouth
  • 16ounces Junipero gin

Preparation

  1. Step 1

    Place onion in a bowl, and season with salt. Let sit for 10 minutes. Sprinkle vinegar on top, and let sit 10 minutes more.

  2. Step 2

    Chill 4 martini glasses in freezer. Fill a spray bottle with ¼-inch vermouth, and spray the inside of each glass. Or pour a little vermouth in each glass, swirl it, then pour it out, so glass is just lightly coated.

  3. Step 3

    Place 3 or 4 pieces of onion in each glass (reserve remaining onion for drinks on another day). Fill a large cocktail shaker with ice, and pour gin over it. Shake vigorously. Strain into glasses. Serve.

I added a dash of white pepper to the salt for a bite. I know Gabrielle H wouldn't approve though.

16 oz of gin for 4 drinks?? I want to go to THAT party!
