Yield:About 60 cloves or ½ cup mashed garlic
  • 4medium heads garlic
  • 2teaspoons olive oil
  • ½teaspoon kosher salt
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Smash the heads of garlic lightly to loosen but not completely separate the cloves. Place on a large sheet of aluminum foil or in a small casserole with a lid. Drizzle with the olive oil and season with salt and pepper. Wrap up the foil into a tight package or cover the dish and roast until the garlic is soft, about 1 hour. When cool enough to handle, peel the garlic by squeezing each clove at one end so that it pops out of the skin.

Oven temp?

Looks like 400F is the most common temp for roasting garlic.

Two recipes now I've found with instructions on how to roast garlic, but no oven temp.

@editor: what's the oven temperature?

I did 400° for 50 mins then cranked up to 425° for 15 more.

An hour is a long time. What temperature do you prefer to roast the garlic. This should come with your recipe.
