Ingredients
Yield:2 cups
- 2medium Italian frying peppers or 1 medium green bell pepper, seeded, deribbed and finely diced
- ½medium Vidalia or other sweet onion, finely diced
- 2medium tomatoes, cored and finely diced
- ¼cup extra virgin olive oil
- ¼cup fresh lemon juice
- 2teaspoons kosher salt
- Freshly ground black pepper, to taste
Preparation
- Step 1
In a medium bowl, combine all ingredients. Pour the mixture on top of the roe that has been poached in water.
