Ingredients

Yield:1 pint
  • 1pint blackberries
  • ½cup sugar
  • ½cup water
  • 1tablespoon lemon juice
  • 2 to 3tablespoons elder flower concentrate (or to taste)

Preparation

  1. Step 1

    Puree the blackberries in a blender or a food processor or put them through a food mill. Press them through a strainer to remove the seeds.

  2. Step 2

    Meanwhile, bring the sugar and water to boil in a small saucepan for five minutes. Cool.

  3. Step 3

    Combine blackberry puree and sugar syrup and mix well. Stir in lemon juice and elder flower concentrate and freeze in an ice cream maker according to directions.

I made this using elderflower liqueur - 2 tablespoons. It overpowered the puree somewhat. Also, one pint of blackberries doesn't yield very much sorbet. Next time, I'll double up on the fruit and adjust the liqueur.

I used St. Germain because I had it and did not have elderflower concentrate. I also used mostly blackberries but a few blueberries and raspberries mixed in because they were there. This is very sweet and also delicious. However, I can't say that I taste the St. Germain in it. But I understand I did not make this recipe!
