Chicken Paprikash On Noodles

Ingredients
- 8ounces whole onion or 7 ounces chopped ready-cut onion (1ā cups)
- 2teaspoons olive oil
- 6ounces skinless, boneless chicken breasts
- 12ounces whole red and green pepper or 11 ounces chopped, ready-cut red and green peppers (2½ to 3 cups)
- 8ounces ripe tomato
- 3tablespoons no-salt-added tomato paste
- 2teaspoons sweet paprika
- 8ounces noodles
- ½cup plus 2 tablespoons no-fat plain yogurt
- 2tablespoons light sour cream
- 1tablespoon cornstarch
- 2pinches salt
- Freshly ground black pepper to taste
Preparation
- Step 1
Bring water to boil for noodles in covered pot.
- Step 2
Chop whole onion.
- Step 3
Heat nonstick skillet large enough to hold all the ingredients until it is very hot. Reduce heat to medium high and add oil. Saute onion until it softens, a few minutes.
- Step 4
Wash and dry chicken and cut into strips; add to the onions and saute until golden.
- Step 5
Meanwhile wash, trim and seed whole peppers and chop; add to pan and continue cooking until vegetables have softened.

Wash, trim and coarsely chop tomato add to pan with tomato paste and paprika and cook over low heat.
- Step 7
Cook noodles according to package directions.
- Step 8
Mix the cornstarch with a little of the yogurt to make a smooth paste. Stir into the yogurt and stir in the sour cream. When vegetables and chicken are cooked, stir in yogurt mixture over low heat and continue stirring until mixture thickens. Season with salt and pepper.
- Step 9
Drain noodles and top with chicken-vegetable mixture.

If you need to use up some mushrooms, throw them in. Really good with the yogurt and sour cream. Kind of like stroganoff
I'd suggest these changes: cook the fresh peppers with the onions. Also, why use two thickeners? There wasn't enough liquid. I added 3/4 cup of chicken broth at the same time I added the tomato paste. There was no need to add any cornstarch whatsoever. For those with a milk allergy, use "fake" cream cheese or sour cream, with the juice of one lemon stirred in. It is very acceptable. Husband says it was quite good! (I give it 4 stars.)
