Preparation

  1. Step 1

    Preheat the broiler. Pour the marinade into a large, shallow baking dish. Put the snapper in the pan and lay 4 mint leaves over each fillet.

  2. Step 2

    Broil until the snapper is just cooked through, about 8 minutes. Transfer the fillets to 4 plates and spoon the marinade over the top. Serve immediately.

"Preheat the broiler. Pour the marinade into a large, shallow baking dish. Put the snapper in the pan and lay 4 mint leaves over each fillet." Novice here, but is the shallow baking dish the same as the pan? Is it put in the broiler? Do you cook the marinade? this seems ambiguous.

Fabulous with halibut! Use fresh basil.

Try it with halibut!! Delicious.

I wish there was a photo of this dish, it was very attractive with the bright green sauce and fish. I made more of the mint sauce than the recipe called for, and would recommend that you do the same. I appreciated this recipe for the quick preparation and delicious flavor. I added additional fresh sauce on the side after broiling the fish. When making the sauce I used fresh basil with the fresh mint (rather than dried) fresh basil is wonderful!
